Any thoughts on how to make the most use of legacy Box Notes that have been created to provide guidance on many different topics but we would now like to include that guidance into a Hub? I am currently having to print the Box Note to a PDF and then assign that file to a Hub.

Have you tried to add that note to the hub? or add the folder(s) to the hub ?
