Using external ID in box sign?
I've been looking through the documents and I can't seem up find this referenced anywhere else...

To add an external ID, click the field then click Advanced Options > External Identifier. Use the external ID to pre-fill data from another application.
Where is the documentation to use this feature?

You can find that option, once you drag the field (e.g. name) into the sign template document.
Then click the fields and you should see the advanced options:
However if you are a developer using the Sign API for this, the templates you create on the Box.com app are not yet supported.
