I know there is a place in Box Sign where I can set the save location for signed documents but I can't find it. Can someone help lead me to the place?

Welcome to Box Community and glad to assist!
From box.com, click 'Sign' in the left navigation. You'll have to click the 'request signature' button and scroll down a bit to find the save location section.
