I would like to know how to restrict collaborators to only see the Excel Online option and not the Microsoft Excel option. I would like to avoid duplicate copies of the spreadsheet.

Unfortunately, there is no option to restrict collaborators to edit your files using only Excel online.
If this is something you would like to be able to do, I would highly recommend submitting this feature request at pulse.box.com! Our product managers review these requests and take them into consideration for future product development.
