I know you can set the notifications for recieving an email when a collaborator downloads, uploads, previews or comments on a shared file. But can you set up Box notifications so that when collaborators edit a shared file using Microsoft Office Online, an email is sent that a new version is available?

Unfortunately, we don't currently offer the feature you asked about notifications for file edits and new version creation.
If this is something you would like to receive and manage, I would highly recommend submitting this feature request at pulse.box.com! Our product managers review these requests and take them into consideration for future product development.
