even though I deleted the account associated with that email. What do I do? I NEED to change the email on my box account to this other email because the one currently on my account I lost access to.

Welcome to Box Community, and we’re glad to help!
Account deletion does not instantly unlink your email from the Box account. Instead, you should’ve release your email address by adding a different email and remove the former.
