We are on the Enterprise trial and will have 2 folder hosted in the US zone and a 3rd in the German zone.
Can I set that in the trial or do we need to wait until we are on the paid plan and turn on Zones?

That is correct, you need to be on a paid plan to be able to turn on Zones. Please note that Box Zones is an added feature. To gain more information about the pricing, I recommend reaching out to Sales or Billing at billing@box.com.
