I would like to be able to see who has accessed a folder without looking at each individual file. Is there a way to do that?

If you are looking to investigate the activities taken in the contents that you or your organization owns, running a User Activity Report would be helpful.
A user activity report provide an overview of the actions your users as well as collaborators are taking in contents that you or your organization owns.
Box Report feature is available to Admins that are on Business and higher plans.
