Is there a way to disable the visibility of a specific folder from being able to see the other collaborators having access to a given folder?

Every folder object has a secondary level of discrete permissions. You can right click on the folder (or access its submenu from the ...) and select “Settings”. In there, if you scroll down a bit you will see the Privacy section which enables you to disable viewing the collaboration elements. Not sure if that is what you are looking for but hope it helps.
